Typica Mejorado Wave Natural
The first release of 2025 is Pepe Jijon’s Typica Mejorado Wave Natural roasted by Hydrangea Coffee Roasters! In the cup I find expressive yellow fruits and yellow florals with a clean sweet finish. Once the coffee cools, the yellow fruit acidity becomes structured, reminding me of biting into an apricot while the sweetness becomes long lasting and clean. This coffee is an incredible example of clean natural processing where you get the boosted/heavier presentation of acidity without an introduction of funky flavors. If you have never tasted Pepe’s coffees before this will be a treat.
