This is the naturally processed counterpart to Prodigal Coffee's Bookkisa Washed! Similar to the fruit forward presentation of Bookkisa Washed, the natural process version showcases the fruitiness and blueberries often found in Ethiopian coffees. We find a heavier blueberry forward acidity tied together to a nice peach note. Once cooled, a pomegranate/stone fruit note starts to appear in the cup making each sip super dynamic! We suggest you try both of these coffees together to compare the washed vs. natural process. The Washed version emphasizes clean and structured acidity with a clean finish while the Natural showcases punchier and heavier fruits with nice rounding and a sweet finish.
Please let this coffee rest for at least 3-4 weeks before brewing. We find Prodigal Coffee's to really open up with more rest and this coffee will benefit from time.
